Weekend Update

Happy Monday Everyone!!

I am currently writing this blog post from my outdoor sanctuary! This weekend was supposed to be filled with rain, but instead we had beautiful weather. I couldn't ask for anything more!!

We had a pretty jam packed weekend over here. We celebrated the hubby's birthday in an amazing way! I have never been to horse races before, and we thought why not?

Friday night was chill, I had a glass of wine and watched Bloodline. Is anyone else watching this? I just started.... it is okay so far.

Saturday was the day or the horses!! Some of my girl friends and I wore hats, because I felt like this event needed it!

I went with a white large hat with a blue and white stripped ribbon

I loved that we each had a different coloured hat!

My beautiful friends <3 <3

With the excitement of the races and amazing group of friends out, I didn't take any other photos except for one of the group. And of course the hubby has his eyes closed... fail!!! But it was a fantastic time. I made a few small $2.50 bets! I wont $5.75 off one too!! No bank accounts were broken!

Saturday morning was served with my favourte go to breakfast right now. Rolled oats with all the toppings. This one had chia seeds, cashew milk, organic wild berries and a spoonful of natural peanut butter. Always hits the SPOT!

And I finished this amazing weekend off, writing this post in my new favourite spot

How was your weekend?

Happy Cinco de Mayo

Happy Thursday Everyone! It is SUNNY and beautiful here today. I can't wait to get home and sit in my backyard in my new gazebo :D

We have to head to Costco after work, but then it's just me, a glass of wine and my gazebo haha. Can you tell I love my new gazebo?

I wanted to share an old recipe of mine today that is a healthy high protein Mexican feeling dish. This is great as a side, or perfect as a meal by itself!

Ingredients: Yields 8 servings
Recipe adapted from Two peas and their Pod
  • 2 cups vegetable broth
  • 1 cup quinoa, rinsed in cold water
  • 2T EVOO
  • 1 clove of garlic, minced
  • 2T freshly squeezed lime juice
  • 1t lime zest
  • 1/2 cup of black beans(can is okay just rinse them)
  • 1/2 cup tomatoes, diced
  • 1/4 cup cilantro, chopped
  • half a packet of stevia or 1/4t of white sugar
  • salt & pepper to taste
Directions: In a small bowl, mix together evoo, garlic, lime juice, lime zest, stevia and salt & pepper. Put aside. In a large pot, add quinoa to boiling vegetable broth, stir, turn heat down to low, cover and let quinoa cook for about 20min. Once cooked, fluff quinoa with a fork and place in a medium size bowl.
Add lime dressing, black beans, cilantro and tomatoes. Mix. I like this cold, but can also serve warm.
Note: I make my quinoa in a rice cooker now.  I find that this is the easiest and best way to get it not sticky(like it is in this picture). This is a trick i have learned since originally making this recipe.  Instead of water, I always use broth.

One of the things I love about being a coach is helping people make this lifestyle just that, a lifestyle. People often get so caught up on DIETS and fail. I like to help people succeed.

I am hosting a 7 Day Clean Eating Challenge starting this Sunday. It is FREE, 7 days and FULL of info on how to live this lifestyle without feeling deprived. I have revamped my whole challenge and it will include brand new recipes, MORE tips and my help with meal prepping. If you're interested in joining, please go to this invite on Facebook

Question: Is anyone doing anything for Cinco de Mayo?

Throw Back Thursday - I AM BACK!

HEY EVERYONE!! Where have I been? I can tell you!

I became a Beachbody Coach back in September, and have been focusing myself 100% on that. I wanted to hold off on blogging till I had that all focused. That way I can successfully incorporate that lifestyle with this blog!

Coaching has been a life changer for me. AND I am not just saying that. I have been reading personal development, meeting new people, creating amazing new friendship and changing lives each and every day!!

Since today is Throw Back Thursday, you better believe it I will be sharing a recipe from my old blog with you!! Since Summer is around the corner, this recipe is fantastic as a side.

Story time; I have an issue with watermelon in any way other than it’s all natural juicy form. Biting into a freshly cut piece right off the rind. YUMMM! I don’t like it pureed, put into smoothies, popsicles, juice, candies, etc and don’t even get me started with any artificial watermelon. Is it just me or does it taste NOTHING like real watermelon other than sweet horribleness that just makes me want to puke. Not many sweet things can do that to me, in fact this may be the only one. I just can’t handle it. Enough story telling, I hope I didn’t ruin your love for watermelon by my silliness! OR discourage you from trying this salad. Because let me tell you…its fab. Yeah, absolutely fabulous. All the ingredients just worked and created this beautiful sweet/salty/light and irresistible combination for a hot summer day salad. Yeah, I just amped that up probably too much. But I am sure you get the idea.

Ingredients: Yields 8 servings
  • 2 cups vegetable broth
  • 1 cup quinoa, rinsed in cold water
  • 1 1/2 cups chopped watermelon
  • 1 T agave nectar (could also use honey)
  • 6 mint leaves, chopped
  • juice of 1 lime
  • salt & pepper
Directions: In a small bowl, mix together agave nectar, mint & lime. Put aside.  In a large pot, add quinoa to boiling vegetable broth, stir, cover and turn heat down to low and cook for 15min. Remove from heat, leave covered for another 5min or till liquid is absorbed. Let the quinoa cool completely. I place mine in the fridge.
Once cooled. mix in the feta and watermelon. Add dressing and serve!
I think the combination of lime, mint, watermelon and add the saltiness from the goat feta makes it a magical flavourful mouthful! Very enjoyable!
I can't wait to have this at BBQ's this Summer!

One of the great things coaching has brought me, is allowing myself to be spoiled once in awhile. I live in Winnipeg, Manitoba Canada. And in the summer we actually have Mosquito Alerts. It's AWFUL! Since we bought this house back in October 2013, I have wanted a gazebo, but life happens, being an ADULT has happened and it just wasn't something I could spend the extra money on. This week, I saw my upcoming paycheque from coaching(we get paid weekly) and I was like, WHY NOT? VERY early Birthday Gift for me :) However, I am recovering from wisdom teeth surgery and have been all loopy......

Thankfully I have amazing friends and they built it for me :)
I can't wait to plant flowers and my garden. This summer is going to KICK ass.

I will be back here at least THREE times a week! I PROMISE <3. I hope everyone is doing well.

Question: Do you like watermelon? If not why? If yes, how do you like it?
